Terroir : clayey and very chalky in the vineyards
Cepage : Ugni blanc 25%, Marsanne 25%, Clairette 20%
Garde : White and Rosé wines , as nearly all Cassis wines, should be drunk within 2 years, with a special mention for the white « cuvée spéciale » which can be kept for 10 years and still will evolve.
Degustation : to be served at 8 °C. Pale yellow, golden and brilliant colour, the wine's nose is flavoured with honeysuckle and broom finishing with a touch of aniseed and a floral scent. Ideal alliance between acidity and fat it provides a perfect roundness in the mouth.
Recommended side-dish : cuttlefish stew with cebette onions.
