GRILLED OYSTERS AND MUSSELS FLAVORED WITH THYME
24 hollow oysters, slightly milky
24 large mussels
5 tablespoons of aromatic olive oil
Open mussels and oysters. Save water from oysters and filter it.
Mix in lemon juice, oyster water, chili, whine wine and thyme leaves. Whip up quickly while incorporating olive oil. Leave the mixture to marinate for at least 30 minutes.
Prepare a nice wood fire. Place oysters and mussels on the grill carefully, making sure that they won't tip over.
As soon as fire is ready, place one teaspoon of marinated sauce inside each shell and place grill directly over fire. Cook for a few minutes. Shellfish must get hot and shrink a little. It will release a delicious juice flavored with the rich oil.
These shells must be eaten with large slices of farmhouse bread, toasted on the same fire. Make sure not to burn your fingers on the hot shells!
The flavors of this recipe are not refined or sophisticated. Rather, they are fresh, natural and rich.
NOTA: If you do not have the opportunity to have this meal on the beach, you can use this recipe at home in a microwave oven, with shells placed on coarse sea salt. Cooking time will take from 30 seconds and 2 minutes.
