At the table, it requires dishes to match: a scramble of truffles, a crayfish gratin, a grilled lobster, a creamed sea bass or sea bream or a chicken supreme. It also accompanies dry goat cheeses, or even a ripened Comté.
From a selection of clairette, marsanne, ugni-blanc and sauvignon, aged for several months in barrels, the family spirit embodies the know-how acquired over generations in the Paternal domain. It composes a bouquet of white flowers, white fruits, underlined by slightly toasted notes. On the palate, it develops a full-bodied, full-bodied volume on which flavors of citrus, spices and flint are based. With a beautiful length and an astonishing freshness, it restores the minerality of the Cassis terroir.
